Short for petillant-naturel, aka methode ancestrale. A traditional method of making sparkling wine that is, in fact, the world's most ancient. The wine is bottled before the primary fermentation is finished, delivering a lower pressure, lightly sparkling wine in the petillant style. The wine is finished without the addition of secondary yeasts or sugars. Pet-nat wines can manifest as cloudy, unfiltered and capped with a crown seal, and they can be white, rose or red in colour. They are a rare item in New Zealand, and don't have a particularly long shelf life. Tip: do not leave them in the boot of your car in the heat of summer.

The delicate fizz is produced through an ancient method by bottling partially-fermented wine and allowing the yeast to finish their job in the bottle which traps in the natural bubbles. The spent yeast hulls, aka "lees", remain in the bottle so the wine has a natural haze to it. With refridgeration, the lees will settle to the bottom. Perfect for smashing poolside on a sunny afternoon, or as a vinous alternative for the hazy or sour beer lover.

Greystone's Pet-Nat has, justifiably, gained something of a cult following. The 2021 vintage is a blend of Riesling and Pinot Noir grapes. The grapes are whole bunch pressed, with just the purest, free run juice taken to tank for the first stage of the fermentation. Four weeks into the fermentation the young wine is chilled and bottled without fining, filtration or sulphur. The second fermentation then happens in the bottle, taking six weeks to reach dryness. As it's not fined or filtered from there, it does drop a sediment in the bottle; this is completely normal and as expected.
