Tom Collins COCKTAIL RECEIPE
The Tom Collins is the orginal 'Collins' cocktail made from carbonated water, sugar, lemon juice and Old Tom Gin. First memorialized in writing in 1876 by "the father of American Mixology" Jerry Thomas.
Ingredients:
60ml Hayman's Old Tom Gin
5 - 6 dashes of gum syrup (sugar syrup with a little more texture, due to added gum arabic) Sugar syrup may be used as substitute
Juice of a small lemon
Soda Water to top
Method:
"Shake up well and strain into a highball. Fill up the glass with plain soda water and imbibe while it is lively." - Jerry Thomas
Garnish:
Garnish with a clean cut segment of lemon.
SHAKE AND STRAIN
Using a Hawthorn strainer (or knife) this technique prevents the ice going into the glass. Straining protects the cocktail ensuring melted ice wont dilute the flavour and mixture.
