Fruity Royal Champagne COCKTAIL RECEIPE
Maybe we can thank the Monks for dabbling with fruit in the fizzy wines they invented - as they paved the way for sparkling mixes. Champagne was a fast rising star in the mid 1800's in Europe and the classic 'Champagne Cocktail' was all the rage at dinner parties and soirees in genteel society. Why don't you try this as a before dinner aperitif or to get you in a socializing mood on a Saturday.
Ingredients:
20ml Finlandia Grapefruit Fusion
10ml De Kuyper Sour Rhubarb
10ml Fresh Lemon Juice
Small piece of Fresh Lemongrass
3 Raspberries
Chilled Champagne or Methode Traditionnelle - I prefer Pol Roger Brut Reserve NV
Method:
Muddle the Raspberries, Lemongrass and Lemon juice in the base of a Boston Shaker. Add the Finlandia Grapefruit and De Kuyper Sour Rhubarb. Fill with ice and shake well. Strain into a chilled Champagne Flute and charge with sparkling.
Garnish:
Garnish with a Raspberry skewered with slice of lemongrass.

SHAKE AND STRAIN
Using a Hawthorn strainer (or knife) this technique prevents the ice going into the glass. Straining protects the cocktail ensuring melted ice wont dilute the flavour and mixture.
