2019 was a year to be especially careful not to over-ripen, to look for that al dente moment of the harvest. A vintage of making infusions during fermentation, of not pushing the presses too much and of working and refining them well before blending them. We also reduced the impact of the barrel in favor of the foudres, all with the aim of taming the wine.Macan 2019, a full-bodied, juicy, firm vintage, somewhat timid but with a lot of potential to develop.
