Octave Whisky

The Starward projects range allows the distillers to play around and discover what they can with their spirit. The Octave release is fully matured in Amercan Oak Octaves that have been used for Yalumba's iconic Aussie Shiraz, The Octavius. The smaller barrels allow for a more intensive aging process which soaks up some red wine characters like rhubarb, plums and stewed orchard fruits. Richer notes of Sultanas, meringue and jam delight the senses in a well made, balanced dram. Octave has just picked up at Double Gold at the San Fran Spirit Awards, one of many for Starward.
