Zero Dosage

No dosage, or liqueur d’expédition for you purists out there, means the remaining natural residual sugar (about two grams per litre, according to my lab, and her name’s Sharon) is all there is. Bone dry then, and 100% Pinot Noir. Drappier dream differently, huh. It’s almost coppery in the glass, with an elegant mousse that brims with refinement rather than rash frivolity. There’s a shapely wash of yeasty and nutty characters slipping under the citrus on the nose, while the palate crackles with chewy cherry fruits and bready richness. The finish is so inordinately and refreshingly dry that you are already summonsing your waiter.
