Gewurztraminer Grand Cru Hengst
Located in Wintzenheim, this Grand Cru is essentially made up of Oligocene limestone conglomerates (14% active limestone) and interstratified marls several hundred meters thick. This Grand Cru, compared by some critics to Chambertin in Burgundy, allows all the Alsatian grape varieties to express themselves in the most perfect way. Since 2004, the entire vineyard has been organically and biodynamically cultivated. arvested by hand and pressed whole pneumatically (between 5 and 8 hours), the grapes exclusively from organic and biodynamic agriculture naturally return their aromas to the must. They ferment spontaneously without adding enzymes or selected yeasts, and without chaptalisation. After fermentation lasting from one to four months, they are matured, depending on the case, in century-old oak tuns or in stainless steel vats.
